Before baking, try topping your banana bread with walnut pieces and a sliced banana. If you choose to do this, you’ll need three bananas in total for this recipe. Brush the banana slices with melted butter or coconut oil to prevent them from drying out during baking.
Vegan Option: This recipe can be made vegan by substituting the eggs with chia seed eggs and using coconut oil instead of butter. To make 3 chia eggs: mix 3 tablespoons of finely ground chia seeds with ½ cup of water. Stir well and let it thicken for at least 15 minutes before using.

- - 1 cup roughly chopped walnuts or other nuts (reserve a few pieces for topping)

- - 2 ripe bananas, mashed
- - ¼ cup almond milk or milk of choice
- - 3 eggs or chia seed eggs (see Vegan Option above)
- - ¼ cup maple syrup or honey (to taste)
- - ¼ cup melted butter or melted coconut oil
- - 2 teaspoons vanilla extract (optional)
- - 2 drops nutmeg oil (to taste)
- - 1 drop cinnamon bark oil (optional, to taste)
- Additional Options
- - Berries (blueberries, raspberries, and/or strawberry slices)
- - ¼ cup chopped date pieces
- - ¼ cup goji berries (dried Wolfberries)
- - ½ cup chocolate chips or chunks (and/or white chocolate chips)
Instructions
- 1. Preheat your oven to 180°C (350°F) and line a loaf tin with baking paper. Set aside.
- 2. In a large bowl, combine all the dry ingredients. Set aside.
- 3. In a second large bowl, combine all the wet ingredients and stir to mix.
- 4. Gradually mix the dry ingredients into the wet ingredients, stirring until just combined. If you’re adding any additional options like chocolate chips, fold them in now.
- 5. Spoon the batter into the lined loaf tin, smooth the top, and sprinkle a few walnuts on top if desired. If you’re using banana slices for the topping, lay them gently on top and brush with melted butter or coconut oil.
- 6. Bake the banana bread for 45-50 minutes, or until a toothpick inserted into the centre comes out clean. If the loaf is browning too quickly, cover it loosely with baking paper and continue baking until cooked through.
- 7. When done, remove the bread from the oven and let it cool slightly before removing it from the tin. Slice and serve warm or at room temperature.
