This light and easy recipe is ideal for breakfast, a healthy snack or as a beautiful light dessert for entertaining. You can use some of your favourite seasonal fresh fruit, frozen berries or even tinned fruit! Plus – it only takes 15 mins to prepare.
NOTE: I like using some grapefruit, orange and tangerine pieces as I think they go well with the grapefruit oil. I also like to add a few berries for colour and flavour.
Chef Kate TIP: You’ll need enough fruit to make 3 – 4 layers depending on the size of the glass or containers you are using. You can also add some Einkorn Flakes or Einkorn Granola and/or nuts and seeds if you like. Shredded coconut or Dried Wolf Berries is also nice sprinkled on top.
Ingredients
- 2 cups plain yoghurt or Greek yoghurt
- ¼ cup honey or maple syrup (to taste)
- 2 drops grapefruit oil (to taste) pink grapefruit, cut in pieces
- 1 – 2 oranges, cut in pieces – 2 tangerines, cut in pieces or slices
- Fresh berries (for serving, optional) Fresh mint leaves (optional, for serving)
Instructions
- In a medium bowl gently mix the yoghurt, honey and grapefruit oil until well combined. Check for sweetness and add a little more if desired.
- Place a little of the yoghurt mixture in the bottom of each serving container (for a great presentation, use an attractive glass or mason jar). Add a small layer of mixed fruit and a few berries and then yoghurt again.
- Repeat the layers until all the ingredients have been used, finishing with a fruit layer and a few fresh berries and a mint leaf. Serve immediately or chill until ready to serve. You can prepare them the night before, so they are ready to serve for a quick and healthy breakfast.
