One change I would make to the Einkorn Muffin recipe for a zesty addition would be to add a drop of orange vitality to the glaze! It’s still yummy without but a nice addition. Another option might be to substitute the Wolfberry Syrup instead of the glaze if you are pressed for time or ingredients.
Great recipe. I am glad I watched the video though, which says to bake at 375, not the 425 like the recipe says, and bake for 25 minutes (printed recipe doesn’t say how long.)
Hi Stephanie, Thanks for your comment. The recipe’s cooking temperature can seem a little tricky, as you are to pre-heat the oven to 425 and then turn the oven down to 375 as soon as you put the muffins in the oven. This is so that the muffins initially start to bake at the higher temperature and gradually bake at the lower temperature of 375. We hope this provides the clarification you were looking for. Thanks again for stopping by!
The video says to bake them at 375 degrees, but the recipe says 425 degrees. 50 degrees makes a BIG difference in how baked goods turn out. Which one is correct? (I’m guessing the 375!)

If I don’t have the blue agave, is there a substitute?
what is the yield on this recipe? Just the 12 muffins or more? THANKS! Can’t wait to try it!

I used a substitute for buttermilk and the eggs. Still awesome. Thanks for video and clarification of oven temp
